Tierra Callada Envero is made from Picual olives grown in La Loma, a region in the very heart of Jaen in Spain. Envero refers to the period that takes place when the olive starts to change color (from green to red) and ends when is fully ripe (black). This EVOO, therefore, comes from olives collected usually through the month of November. This is the starting point: the olives are harvested at the moment of perfect ripeness. Then there is the olive oil extraction: a careful and laborious process, exacting in detail. Our techniques blend the most modern technology with the savoir-faire of another age, a time when quality was more valued than speed. It comes in a black glass bottle to preserve the oil from light and a non-refillable measuring cap. Simple, elegant, and original design.
