Made from the pasteurized milk of Alpine goats, Leonora is a velvety bloomy rind log with a white, slightly flaky paste that is covered in ash. Oscar has outdone himself with this brick-shaped, natural-mold-rind cheese which envelops a compact white paste. The artisanal production is evident from the layered, complex flavor and long, lingering finish.
